My Peru
I was born and raised in Peru, and I am proud of it. Located in the Western side of South America, it was the home of the Inca Empire, the larges state in Pre-Columbian America. Peru is one of the nexus of the New World foods, blessed with a vertical geography, from its coastline to the mountains and Amazon jungle. These unique features have favored the development of a varied and opulent cuisine, dating back at least six thousand years. Peruvian cuisine is like a wide channel fed by many tributaries: pre-Incan and Incan, European (Spanish, Italian, French) plus Polynesian, Chinese and Japanese. Peruvian food is one of the most varied and delicious, also called one of the “Finest Cuisine of the Americas”.
“The cuisine that legendary French chef and culinary writer Auguste Escoffier called one of the best in the world”
The Washington Post
