My PeruI was born and raised in Peru, and I am proud of it. Located in the Western side of South America, it was the home of the Inca Empire, the larges state in Pre-Columbian America. Peru is one of the nexus of the New World foods, blessed with a vertical geography, from its coastline to the mountains and Amazon jungle. These unique features have favored the development of a varied and opulent cuisine, dating back at least six thousand years. Peruvian cuisine is like a wide channel fed by many tributaries: pre-Incan and Incan, European (Spanish, Italian, French) plus Polynesian, Chinese and Japanese.
